Unbake Chocolate Macaroon

UNBAKE CHOCOLATE MACAROONS
2 cups brown sugar
1/2 cup milk
1/2 cup shortening
1/2 tsp. salt
6 tbsp. cocoa
2 cups oatmeal
1 cup coconut
1 tsp. vanilla
Mix together in a saucepan brown sugar, milk, shortening, and salt. Bring to boil and let boil for 5 minutes. Meanwhile in a large bowl mix together cocoa, oatmeal, and coconut. Remove mixture from heat. Let stand for 1 minutes and add vanilla.
Pour hot mixture into dry mixture and stir well. Drop by teaspoonful on waxed paper and let stand until set. Makes about 30. Store in tightly closed container.

Servings: yields about 40 macaroons
Preparation Time: 15 minutes
3 cups unsweetened dried coconut flakes
3/4 cup almond flour*
3/4 cup cocoa powder
1 cup maple syrup
1/3 cup corn oil
1 tablespoon vanilla extract
1/2 teaspoon salt
Mix all ingredients together well. Form into small balls using a spoon or cookie scoop and refrigerate until firm.
*You can grind your own almond flour by placing whole almonds in a blender/food processor and blending until a fine meal.
